    No baby news! Today was the one week mark. I’m sure that it is so hard to wait. Thanks everyone for your interest! I promise that I will tell you! 😉

    I have spent the past two hours trying to fill my berry jars. I have both items but I love the pantry and was trying for another. I like that it only takes one space but holds 12 items. But I do have the other pantry that is similar to it, so it’s all good…it is just me wanting to try to get the most out of it! Ha ha! Anyway, I thought tonight was the deadline, and I’m done with the game for now! I don’t think that one more day will help.

    We were gone much of the day today. We didn’t do anything that focused on Memorial Day sadly, but that isn’t to say that we are unappreciative because we are very grateful to those who fought for our freedoms. Instead we went out of town to visit my mother-in-law. Even though our visit wasn’t as long as we wanted it to be it was a special time.

    As far as duplicate items from wish lists….if I ever send something you received from someone else, no need to return it. You can play it forward or just keep the extra.

    I like the idea of alphabetizing wish list….I have an idea that mine is not. I don’t have much on my wish list, though. Mostly because I haven’t taken the time to figure it out.

    Dee – I have made three new recipes this weekend in less than a 24 hour period. I made Enchilada Casserole (from Taste of Home). Delicious! I made Cranberry Buttermilk Scones (also delicious despite my mistake of too much sugar on the top). Tonight I made Chicken Fajita Casserole and my mouth was on fire. But my husband thought it could be much hotter (2x or 3x). Anyway, I’m super sensitive and I knew when I was making it what the result would be, but I was just trying to use up some things in my pantry.

    Happy June 1st to all !
    Sheba.. Was really hoping when I saw you post this morning that there may be some baby news….Hopefully soon..
    New caregiver starting tomorrow but not sure… a red flag or two but will keep close eye on things and see how it goes.. Thankfully my mom is very sharp mentally and is not afraid to speak up…Continuing to find some additional help.
    moms… my friend is vaccinated… will be retested this evening as are all the residents/staff..The three positive cases are not in her wing but doesn’t matter.. they are all on lockdown…I was told on Sunday that it would be two weeks before they will allow visitation… but will see what unfolds.
    Lots of new things to do in WW and new items… Looking forward to Wednesday’s maintenance…
    Back to work today… but sometimes I would rather stay home and play !

    I am not sure where I got this recipe. I think it was hotter because I used Cayenne Chili powder. *CORRECTION – QoS used “McCormick’s Chipotle Chile Pepper” instead of chili powder accidentally!

    Oven Baked Fajita
    Ingredients:
    1 pound boneless, skinless chicken breasts, cut into strips
    2 Tbsp vegetable oil
    2 tsp chili powder
    1 1/2 tsp cumin
    1/2 tsp garlic powder
    1/2 tsp dried oregano
    1/4 tsp seasoned salt
    1 (15 oz) can diced tomatoes with green chilies (Rotel)
    1 medium onion, sliced
    1/2 red bell pepper, cut into strips
    1/2 green bell pepper, cut into strips

    Directions:

    Preheat the oven to 400 degrees. Place chicken strips in a greased 13×9 baking dish.
    In a small bowl combine the oil, chili powder, cumin, garlic powder, dried oregano, and salt.
    Drizzle the spice mixture over the chicken and stir to coat.
    Next add the tomatoes, peppers, and onions to the dish and stir to combine.
    Bake uncovered for 20-25 minutes or until chicken is cooked through and the vegetables are tender.

    CORRECTION – I did NOT use Cayenne Chili Powder…..I used McCormick’s Chipotle Chile Pepper instead of Chili Powder. (I thought I was using Chili Powder, but I think that is why the dish was so hot). Once the recipe is fished out you will see what I’m talking about. Chili Powder was in the recipe.

    You can see why I’m not a cook! LOL!
