    I know, I know, it doesn’t scream Christmas but if I were to guess what’s the most likely type of cookie that would be set aside for Santa next to the tree? A chocolate chip cookie. I tried tinkering with this recipe and it lost the magic so I recommend that you follow the instructions closely and you’ll be rewarded with “a cookie that would be moist and chewy on the inside and crisp at the edges, with deep notes of toffee and butterscotch to balance its sweetness.” A winner on any cookie plate.

    COOK’S ILLUSTRATED PERFECT CHOCOLATE CHIP COOKIES

    yield: About 16 cookies prep time: 1 hour cook time: 28 minutes total time: 1 hour 30 minutes

    INGREDIENTS:
    1¾ cups unbleached all-purpose flour (8¾ ounces)
    ½ teaspoon baking soda
    14 tablespoons (7 ounces) unsalted butter, divided
    ¾ cup (5¼ ounces) dark brown sugar
    ½ cup (3½ ounces) granulated sugar
    1 teaspoon salt
    2 teaspoons vanilla extract
    1 large egg
    1 large egg yolk
    1¼ cups semisweet chocolate chips

    DIRECTIONS:
    1. Adjust oven rack to middle position and preheat oven to 375 degrees F. Line 2 large (18×12-inch) baking sheets with parchment paper.

    2. In a medium bowl, whisk together the flour and baking soda; set aside.

    3. Heat 10 tablespoons of the butter in a 10-inch skillet over medium-high heat until melted, about 2 minutes. Continue cooking, swirling the pan constantly until the butter is dark golden brown and has a nutty aroma, 1 to 3 minutes. Remove skillet from heat and transfer the browned butter to a large heatproof bowl. Stir the remaining 4 tablespoons butter into the hot browned butter until completely melted. Set aside and let cool to room temperature.

    4. Add both sugars, salt, and vanilla to the bowl with the butter and whisk until fully incorporated. Add the egg and egg yolk and whisk until the mixture is smooth with no sugar lumps remaining, about 30 seconds. Let the mixture stand for 3 minutes, then whisk for 30 seconds. Repeat the process of resting and whisking 2 more times until the mixture is thick, smooth, and shiny. Using a rubber spatula or wooden spoon, stir in the flour mixture until just combined, about 1 minute. Stir in the chocolate chips and give the dough a final stir to ensure there are no hidden flour pockets.

    5. Scoop the dough into 16 even portions, each about 3 tablespoons, and arrange them 2 inches apart on the prepared baking sheets, 8 dough balls per sheet.

    6. Bake the cookies 1 tray at a time until the cookies are golden brown but still puffy, and the edges have begun to set but centers are still soft, 10 to 14 minutes, rotating the baking sheet halfway through baking. Transfer the baking sheet to wire rack and allow cookies to cool completely before serving. Cookies can be stored in an airtight container at room temperature for up to 3 days.

    The only cookie my family makes during the holidays are meringue cookies. Need to find that recipe… We do make other things like swedish nuts and chocolate covered coconut balls though.

    Easy Christmas cookie recipe. Use the exile on the underside of the lid of Quaker old fashioned oats. Add a little orange zest and dried cranberries. 🙂

    Easy OREO Truffles

    “These truffles are very easy and delicious. You can’t go wrong with OREO, cream cheese and chocolate!”

    Ingredients
    1 (16 ounce) package OREO Chocolate Sandwich Cookies, divided
    1 (8 ounce) package PHILADELPHIA Cream Cheese, softened
    2 (8 ounce) packages BAKER’S Semi-Sweet Baking Chocolate, melted

    Directions
    Crush 9 of the cookies to fine crumbs in food processor; reserve for later use. (Cookies can also be finely crushed in a resealable plastic bag using a rolling pin.) Crush remaining 36 cookies to fine crumbs; place in medium bowl. Add cream cheese; mix until well blended. Roll cookie mixture into 42 balls, about 1-inch in diameter.
    Dip balls in chocolate; place on wax paper-covered baking sheet. (Any leftover chocolate can be stored at room temperature for another use.) Sprinkle with reserved cookie crumbs.
    Refrigerate until firm, about 1 hour. Store leftover truffles, covered, in refrigerator.

    let me see which recipe i want to share … i have a new one from last year that is good & easy … or i have my grandmother’s and oldest warthog’s fav – lets do that

    Sour Cream Cookies

    1 1/2 cups sugar
    3 tbls shortening
    2 egg
    1 cup Sour cream
    1 tsp soda
    1 tsp baking powder
    1 tsp. vanilla
    2 1/2 cups flour

    Mix together & drop spoonfuls on cookie sheet.
    (tsp size drop yield 9 dozen, tbls size drop yields about 3 dozen – Recipe doubles well.)
    Bake 340 degrees for about 6 minutes

    Cookie Frosting – Butter Icing
    Blend 1/2 cups sifted confectioners sugar
    3 tbls soft butter
    stir in about 1 1/2 tbsp. milk* & 1/2 tsp vanilla
    stir/mix until smooth
    *NOTE if using a lot of food coloring, reduce amount of milk – replace 1/2 tbsp. milk with food coloring, check consistency
    (3 batches of icing to 2 batches of cookies)

    Spritz

    1 cup soft butter
    2/3 cup sugar
    3 egg yolks
    1 tsp vanilla
    2 1/2 cups flour

    Heat oven to 400. Mix butter, sugar, egg yolks, and vanilla thoroughly. Work in flour. Force through cookie press onto ungreased baking sheet in desired shapes. (If you want the cookies red or green, divide and add food coloring, but will probably require extra flour. If dough is too sticky, mix in a little extra flour.) Bake 7 to 10 minutes until set but not brown. Makes about 6 dozen.

    (We often triple this recipe.)

    Chocolate Peanut Butter Balls

    3/4 cup creamy peanut butter
    1/3 cup butter, softened
    3/4 tablespoon vanilla
    1/2 cup sweetened condensed milk
    3 1/2 cups 10X Powdered Sugar
    waxed paper
    16 oz chocolate candy coating

    Beat peanut butter, butter, and vanilla in large bowl with electric mixer on high speed until creamy.

    Gradually add sweetened condensed milk and sugar, mixing well. Dough will be crumbly.

    Shape dough into 1 inch balls. Place on waxed paper-lined baking sheet. Chill 2 hours until set.

    Melt chocolate following package instructions. Dip each ball, using a fork, into chocolate. Return to baking sheet. Chill 1 hour until firm.

    Amish Sugar Cookies

    1 cup sugar
    1 cup powdered sugar
    1 cup butter
    1 cup cooking oil
    2 eggs
    4 1/2 cups flour
    1 tsp baking powder
    1 tsp cream of tarter
    1 1/2 tsp vanilla

    Mix well
    Make small ball, then press down with a small cut glass or vase with a pattern on bottom (to prevent sticking, try dipping glass lightly in cold water before pressing cookie)
    Bake on ungreased cookie sheet 350 degrees 10 minutes until very lightly browned edges (10-15 minutes)

    21 Hello Chcococat, not sure how long it’s been since you visited WW but on July 8th they did the Webkinz X release and completely changed WW. The changes took a lot of getting used to and there are still tons of items that are not functioning properly.

    Orange Cranberry Oatmeal Cookies

    INGREDIENTS:

    1/2 Cup(s) (1 stick) plus 6 tablespoons butter, softened
    3/4 Cup(s) firmly packed brown sugar
    1/2 Cup(s) granulated sugar
    2 Eggs
    1 Teaspoon(s) vanilla
    1-1/2 Cup(s) all-purpose flour
    1 Teaspoon(s) Baking Soda
    1 Teaspoon(s) ground cinnamon
    1/2 Teaspoon(s) salt (optional)
    3 Cup(s) Quaker® Old Fashioned Oats
    1 Cup(s) dried cranberries
    1/8orange zest (or to taste)

    PREPARATION:

    Heat oven to 350°F. In large bowl, beat butter and sugars on medium speed of electric mixer until creamy. Add eggs and vanilla; beat well. Add combined flour, baking soda, cinnamon and salt; mix well. Stri in orange zest. Add oats and cranberries mix well. Drop dough by rounded tablespoonfuls onto cookie sheet lined with parchment paper. Bake 8 to 10 minutes or until light golden brown. Cool 3 minutes on cookie sheets; remove to wire rack. Cool completely. Store tightly covered.

    Whipped Shortbread Cookies (makes 36)

    1 cup unsalted butter, softened
    1/2 cup icing sugar, sifted
    1/4 cup cornstarch
    1 tsp vanilla extract
    1/2 tsp salt
    1 1/2 cup all-purpose flour
    Colored sugar for sprinkles

    Preheat oven to 300 F. In large bowl, beat butter, sugar, cornstarch, vanilla and salt until fluffy using an electric mixer. Mix in flour until just combined. Cover bowl and refrigerate 20 minutes until just firm. Roll dough by tablespoons into balls and place on parchment paper lined cookie sheets. Using lightly floured tines of a fork, press tops of cookies until flattened to 1/2 inch thick. Sprinkle colored sugar on cookies. Bake 14-16 minutes until light golden brown. Cool 10 minutes on cookie sheets, transfer cookies to wire racks and cool completely.

    Nanaimo Bars

    “Because it’s three layers, this sounds hard but it’s worth it. My son is famous for making and taking these in to work. I’ve heard other names but here in the Northwest everyone knows them as Nanaimo bars. They are sold on British Columbia Ferries and at coffee stands. If you can’t find custard powder, I’ve used instant pudding mix with good results.”

    Ingredients
    1/2 cup butter, softened
    1/4 cup white sugar
    5 tablespoons unsweetened cocoa powder
    1 egg, beaten
    1 3/4 cups graham cracker crumbs
    1 cup flaked coconut
    1/2 cup finely chopped almonds (optional)

    1/2 cup butter, softened
    3 tablespoons heavy cream
    2 tablespoons custard powder
    2 cups confectioners’ sugar

    4 (1 ounce) squares semisweet baking chocolate
    2 teaspoons butter

    Directions

    In the top of a double boiler, combine 1/2 cup butter, white sugar and cocoa powder. Stir occasionally until melted and smooth. Beat in the egg, stirring until thick, 2 to 3 minutes. Remove from heat and mix in the graham cracker crumbs, coconut and almonds (if you like). Press into the bottom of an ungreased 8×8 inch pan.

    For the middle layer, cream together 1/2 cup butter, heavy cream and custard powder until light and fluffy. Mix in the confectioners’ sugar until smooth. Spread over the bottom layer in the pan. Chill for an hour to set.

    While the second layer is chilling, melt the semisweet chocolate and 2 teaspoons butter together on top of a double boiler. Spread over the chilled bars. Let the chocolate set for 30 minutes before cutting into squares.

    a few tips

    it would be much easier to make in an 8×8″ square pan (i had a 9×9 and it was harder to spread the layers when they’re thinner)

    don’t add the egg to the saucepan…if it’s too warm the egg will CURDLE. slowly beat about half of the chocolate mixture into the egg, a little at a time, so that it won’t curdle from the heat.

    i had to make the room with wshop & rare items (it was for a contest) and somehow forgot about the dining out tables when i was tinkering with it after.

    i love how this table’s base match the brownstones and the checkered pattern looks cozier than the plain red table top. now i’m finally happy with this room.

    3 cups powdered sugar 2 cups butter or margarine, softened 2 teaspoons vanilla 1 teaspoon almond extract 2 eggs 5 cups Gold Medalâ„¢ all-purpose flour 2 teaspoons baking soda 2 teaspoons cream of tartar

    Decorator’s Glaze
    4 cups powdered sugar 1/4 cup water 1/4 cup light corn syrup 1 teaspoon almond extract Food colors, as desired

    Decorations
    Betty Crockerâ„¢ decorating gel (in 0.68-oz tubes), colored sugar and/or decors, if desired Betty Crockerâ„¢ decorating icing (in 4.25-oz tubes), if desired Flaked coconut, if desired

    Directions

    Directions

    4. In small bowl, beat all glaze ingredients except food colors on low speed until smooth. Divide among several small bowls. Stir desired food color, one drop at a time, into each until desired color. Decorate cookies with glaze and other decorations as desired.

    Has anyone tried to enter the code from the Advent Calendar Christmas Tree on an Asian account yet? I will be the first if no one has yet.

    No-Bake Chocolate, Peanut Butter, and Oatmeal Cookies :

    Makes 36 cookies
    Hands-On Time 10 min
    Total Time 30 min

    8tablespoons (1 stick) butter
    1½cups packed light brown sugar
    ½cup heavy cream
    â…“cup unsweetened cocoa powder
    ½cup creamy peanut butter
    1teaspoon pure vanilla extract
    3cups old-fashioned rolled oats (not quick-cooking)
    1cup dry roasted peanuts

    1. In a large saucepan, melt the butter over medium-high heat. Stir in the brown sugar, cream, and cocoa, then boil for 1 minute.
    2. Remove the saucepan from heat, add the peanut butter and vanilla, and stir until smooth. Stir in the oats and peanuts.
    3. Drop heaping tablespoonfuls of the batter onto wax paper–lined baking sheets, spacing them 1 inch apart, and let cool until set, about 20 minutes.

    Keep the cookies at room temperature, between sheets of wax paper in an airtight container, for up to 3 days.

    I had the busiest day today that I’ve probably had all year. First the older youth conducted the service with a funny skit, then there was the younger ones christmas pageant and then another concert at a different church. Only three things but very time consuming.

    Bepsy, We had an Annie marathon the other day while I was watching a friend’s little one. 🙂 I love that musical, but the new version is not my favorite.

    Chickadee did the show two seasons at two different theaters, she was an orphan both times and also Mr. Bundles for one of the runs. Sigh, I miss her theater days. 🙁

    Hi everybody. Arrived back home Friday evening after a week away. I took my two year old Grandson, soon to be three on a vacation. He loves Thomas the Train and has never been on a train ride so off we went to ride a real train and he loved loved loved it. His whole world is trains. He is mildly autistic and will soon be receiving speech and behavioral therapy so this was my chance to basically have my precious little Dominic all to myself. Hence my absence from the blog.

    So much to catch up on. Goodness Zingy, your skating rink is a designer masterpiece. I certainly hope you sent it to Michael Webkinz. So much thought went into it. Every single detail is well thought out. I bow to you.

    All the cookie receipies sound absolutely sinful. I don’t bake anymore, I leave that to my grown children now. I use to have all the grandchildren over and we would bake cookies all day long making all sorts of goodies but they are teenagers or have kiddos of their own so now they make their own memories.

    Stagemom, what an adorable pup. So cute sitting with Santa. I bet Santa is going to be leaving that little pup some nice goodies under the tree this year.

    I love all the outfits from the cracker except for the year 10 king and queen outfit. I must have all the rest. Guess I better go buy some more points.

    So many yummy recipes.
    I love baking, but I have so many issues and rules with foods that I tend to avoid most high calorie foods at all costs. I sometimes treat myself to a frappuccino, but that’s about it.

    i was trying to fish out taggy’s comment half an hour ago before choco posted. we were on the road (had to pick up potting soil for a japanese maple) so it was slow going thru my cell phone but taggy’s comment was already out so i didn’t need to do anything. maybe mom’s did it earlier?

    sorry about the no cookies, dee. it’s always fun to hear what you’re serving. is there a good recipe for vegan pies or baklava (what’s a good replacement for melted butter)?

    thanks for the kind words on the room, TL! my honey’s niece also has a very mild version of autism (or she’s very low on the spectrum). she seems to be more fond of playing on a computer or iphone than interacting with people but her parents have her see a therapist (it took a while to get her to talk) and it’s been very helpful. she loves thomas the train

    no clue tho how a vegan variety would work…would have to use margarine and vegans do not use honey, so you would have to do the Turkish variety using rosewater………..hmmmmmm
    never had the Turkish version……….

    Dee, I substitute pure, unrefined cold pressed 100% organic extra virgin coconut oil for butter. I use it instead of oil for eggs, sautee veggies in, although I have not used it for baking as I rarely bake anymore so maybe try it and see. You cannot taste the coconut. Just a suggestion.

    My boo loved loved Thomas when he was little. I took him to Greenfield Village when Thomas was on tour. So we actually got to ride the Thomas train. I can’t still see him asleep in his car seat holding the wooden Henry train as we drove home.
