we are home. road trip was a success….dd got a bunch of clothes and I got a real heavy bag from bath and body…finally used up my Christmas gift card

i make slow-roasted pork every few weeks or so and it makes great pulled pork depending on how long you roast it.
for around 8 lbs pork butt (shoulder blade tends to dry out), mix 1/2 cup kosher salt and 1/2 cup sugar (essentially 1:1 ratio). rub this all over pork and refrigerate for at least 6 hours or overnight.
preheat oven to 300 degrees. lightly rinse the pork under running water to remove the salt/sugar mixture (else it’ll be too salty). roast for 3-4 hours basting every hour or so. i use a dutch oven and cover it so that it stays moist in between basting.
when ready to serve, mix 7 tbsp brown sugar and 1 tbsp kosher salt and place this on top. heat the oven to 500 degrees and cook, uncovered, for roughly 10 minutes until the sugar is mostly caramelized.

They set the pop ups so that is can be easy to “accidentally” use the diamonds.. like to harvest early, etc… stinks. I mentioned that to them.. well, some people want to blah blah… (said Ganz) well sure but most do not want to and definitely not by accident…

if you have adblock turned on, it’s kinda easier to see the tips of the owl ears-there ‘s a big white square where ads used to be and the dark blue ears of the owl pops against the white next to it.

i started making it with all the fixings then but later on decided that the pork was lovely by itself with rice and a side dish of vegetables. it kinda tastes like ham too so we put pieces of it in stir fries, soup, fried rice, tortillas, etc, throughout the week. the original recipe is too salty so i cut both the salt and sugar in half with no deterioration in flavor.
if you visit momofuku in new york with 9 of your closest friends, they have a lavish version of this dish with fresh oysters for $200.

Been to the original Momofuku before it got huge-it was a few blocks where sis used to live in Manhattan near Stuyvesant.
I totally thought we were going to get a block for our rooms and was going nuts opening docks and clicking to the end but not finding it. I guess one more thing to skip on WKN.
Love the butterfly dress tho (got one earlier from WF and it’s exactly the same, maybe we won’t have to go to FB later on, we just have to wait for prizes to show up on WKN). Butterfly sandals will be floating on WKN starting Oct 17

Depends on what is ordered and drinks but for $200 for 10 people for the Bo Ssam -that dish plus fresh oysters and sides comes out to $20 per person for that and the one we make at home can feed twice that number of people.

Momofuku probably has become way more upscale than when I went there-it used to be a small neighborhood restaurant. Same owner but he’s gotten the press’ attention so he went on to open two other successful joints, Milk Bar and Ssam Bar, and even started a magazine, the Lucky Peach.
