Pig Pickn Cake

This is a classic southern cake. Some folks call it Pig Picking, but we prefer Pig pickn' It's very moist and very tasty.

Pig Pickn Cake

1 package yellow cake mix (I like Pillsbury)
1 can mandarin oranges, drained (11 ounce)
1 package Jell-O instant vanilla pudding mix 1 (3.4 ounce)
1 can crushed pineapple (15 ounce)
1 container Cool Whip frozen whipped topping, thawed (16 ounce)
3 eggs
Oil

Preheat oven to 350  
Prepare (3) three  8 inch cake pans with a non stick spray or butter. (The disposable pans work quite nice.)

Prepare the cake mix according to the directions on the back. Then fold the oranges in to the batter.  Pour mixture into the pans.

Baked Cake

Bake for 20 to 25 minutes. Test with a toothpick inserted into the center of the cake. If the cake done it should come out clean.

Time to make the filling! In a bowl, combine crushed pineapple with juice and pudding mix, then add the Cool whip..

Filling

Spread this heavenly mixture between cake layers. Chill in refrigerator. You can top with a few slices of mandarin oranges if you like.
