A delicious crispy potato recipe
1 1/2 lb. red potatoes
3 tablespoon minced onions
3 tablespoon white wine vinegar
2 tablespoon olive oil
1 tablespoon Dijon mustard
1 teaspoon sugar
salt and pepper
Clean and chop the potatoes into large bite sized pieces
Boil potatoes in salted water until tender, about 10 minutes. Drain, rinse and allow to cool.
Time to make the dressing! Mix onions, vinegar, oil, mustard, sugar, salt and pepper in a bowl until combined.
Brown the potatoes in a frying pan over medium heat, stirring constantly. When done they should be brown and crispy.
Top with the dressing and serve!
